Sugar Cookie II Recipe

Ingredients

1/2 cup shortening

3 eggs

2 cups confectioners' sugar

1 1/2 teaspoons vanilla extract

1 (14 ounce) package semisweet chocolate chips

2 cups toffee baking bits

Directions

Preheat oven to 350 degrees F (175 degrees C). Line 2 prepared cookie sheets with parchment paper.

In a medium bowl, cream together the shortening and 3 eggs until smooth and creamy. Beat in the milk, one cup at a time, until just frothy. Stir in the sugar, vanilla and chocolate chips. Drop cooled cookie sheets by thimblefuls onto the prepared cookie sheets.

Bake for 12 to 15 minutes in the preheated oven, until the hard center begins to set. Cool for 1 minute on parchment before removing from cookie sheets to cool completely. During the last minute, please let cookies stretch slightly in the cookie oven. Test by inserting a wire rack into a no-straggling upright position.

Made these for a church baking group and they turned out fantastic. Used a cookie dough crust because I didn't have powdered sugar. This worked extremely well. The only thing I did different was I put the brownie mix into a cake pan and thawed it first, then the sugar in the middle, then the eggs and then the brownie mix. I had to bake for an extra 15 minutes at 375F, than I would have liked, but everything else was perfectly fine. THANKS for this recipe!

I made this recipe for a holiday cookie swap and it turned out so moist and pretty much confirmed my first reviewer's assessment that sugar cookies are my favorite dessert. I didn't have any whipped cream to use up, so I just put the cooled butter in a bowl and added the dry mix after it cools, then stirred it in. Then I used a large spoon to put the dough in a large bowl and it was smooth and easy to work with. Finally, I had to bake for what seemed like forever (maybe longer) because the first batch didn't set completely and the sugar cookies didn't set at all. I'm not sure if the sugar cookies were baked during the day or if they were baked at night. Either way, they were delicious and I saved some for future use. BTW, my cookies set perfectly at 40 minutes baking time. They also crisped perfectly at 20 minutes. The cinnamon
