1 1/2 cups butter
3/4 cup white sugar
1 1/2 cups brown sugar
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract
1 cup pitted dates
1 1/2 cups flaked coconut
3 tablespoons all-purpose flour
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, brown sugar, white sugar, and brown sugar until light and fluffy. Beat in the egg, one at a time. Beat in the vanilla extract and date mix until well blended. Blend in the dates and coconut, then fold into the creamed mixture. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
