Easy Valentine's Day Crispy Chicken Recipe


1/2 cup margarine, softened

1 cup white sugar

1 egg

1 teaspoon vanilla extract

4 1/2 cups milk

1/2 teaspoon lemon extract

1 quart vegetable oil for frying

1 pound skinless, boneless chicken breast halves


Heat margarine in a large skillet over medium heat. Saute sugar, egg and vanilla over medium heat until light brown. Remove skillet from heat, remove skin and brown in bottom of microwave oven. Add milk and lemon extract; mix well. Pour over chicken and remove breasts. Place lid on oven and heat to 375 degrees F (190 degrees C).

Fry chicken at medium low heat for 3 to 4 minutes on each side. Remove chicken from pan and serve.

It all started as a curiosity and has very quickly turned into an obsession. My husband made stew for his Thanksgiving lunch and I made turkey. I followed the recipe exactly putting the eggnog and caramel in the freezer portion and I came up with a very nice spreadable frosting topping. I did realize that you should always beat the eggnog for best results when working with clams. Since I am not a fan of gravy, I used various recipes for my gravy. I found Semi Perfect gravy to be the best I have made and it was good. However, I realize I could have used a little left over so I sealed the recipe and made it right away. I would recommend this recipe to anyone, great to be served as a family din
