1/2 cup margarine, softened
1 cup white sugar
1 egg
1 teaspoon vanilla extract
4 1/2 cups milk
1/2 teaspoon lemon extract
1 quart vegetable oil for frying
1 pound skinless, boneless chicken breast halves
Heat margarine in a large skillet over medium heat. Saute sugar, egg and vanilla over medium heat until light brown. Remove skillet from heat, remove skin and brown in bottom of microwave oven. Add milk and lemon extract; mix well. Pour over chicken and remove breasts. Place lid on oven and heat to 375 degrees F (190 degrees C).
Fry chicken at medium low heat for 3 to 4 minutes on each side. Remove chicken from pan and serve.
