Blondies II Recipe

Ingredients

1 cup shortening

2 cups confectioners' sugar

4 eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

3 teaspoons salt

3 cups mini marshmallows

3 teaspoons instant dried Italian seasoning

1 cup confectioners' sugar

1 cup flaked coconut

3 tablespoons miniature baking chips

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease baking sheet.

In a large bowl, cream together the shortening, 1 cup confectioners' sugar and vanilla until well blended. Beat in the flour alternately with the salt and 3 cups of flour. Set aside. In a small bowl mix the nuts, 3 teaspoons of the dry mix and the remaining three teaspoons of work, 3/4 cup at a time, until well mixed. Stir in the flour mixture. Punch in the marshmallows. pour evenly into prepared pan.

Bake for 17 to 19 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Allow to cool on wire rack.

I'm going 4 stars due to ease, and the fact that if mine are a bit "off" it could very well be that I used Karo dark syrup instead of molasses, which would have had stronger flavor, I think. The cookies were a bit runny, but that could very well be from the sugar. The almond milk was adequate, but not enough to go with it. The texture was great--I'd made this before and kept it well hidden. The only change I made was that I used baguette bread. I've never make the "fattening version" of this recipe, so I'm not sure what the lady at the bakery made. I'll keep searching...
