1 (18.25 ounce) package peach flavored Jell-O mix
3/4 cup water
1 cup white sugar
1/2 cup vegetable oil
1/2 teaspoon baking soda
1 teaspoon roll-your-own soda
1/2 cup margarine
2 egg whites
Combine ingredients in a medium bowl. Stir until smooth and creamy. Spread evenly into cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until lightly brown. Remove from baking sheets from the center rack and place the cookies on a wire rack to cool for 1 hour. Before serving, top with whipped cream and can of fruit cocktail, if desired.
