Crazy Rice Recipe

Ingredients

1 (18 ounce) can white rice

1 (6 ounce) can sliced mushrooms

1 small onion, chopped

1 small green bell pepper, chopped

1 large carrot, grated

1 bunch fresh parsley

1 bunch fresh parsley, sliced

1/2 cup shallots, minced

1 teaspoon dried oregano

Directions

Bring a large pot of water to a boil. Add white rice and cook for 1 minute, stirring to melt the rice. Drain and stir in mushrooms, onion, bell pepper, carrots and parsley.

Mix together shallots, oregano, salt and pepper. Transfer to the pot and simmer over medium heat for 3 hours.

I submitted this recipe many years ago as an experiment when I was learning about the site. It is great for easy recipes and great visual appeal. Just search for Pisco on the menu and its easy to go to. I recently discovered that Pisco is actually made from dried pisco, which I immediately used. Upon closer inspection, I discovered that I had omitted the rum, which I had deemed to be unnecessary. However, I would have given this 5 stars, but I had to doctor it slightly. The sloppy texture was working for me, at least. I was having troubles getting the sauce to thicken, so I might as well save some time and try again with the next batch. It was still a little runny, so maybe next time
