Chocolate Chip Muffins Recipe

Ingredients

3 eggs

1/3 cup white sugar

1/2 cup all-purpose flour

3/4 teaspoon baking powder

2 teaspoons baking soda

1 teaspoon salt

1 cup margarine, melted

1 cup milk

1/2 cup vegetable oil

2/3 cup confectioners' sugar

1 teaspoon vanilla extract

1/2 cup chocolate chips

1/2 cup chopped walnuts

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners. Stir together eggs, sugar, flour, baking powder, baking soda, salt and margarine.

In a large bowl, cream together the margarine, milk, oil, confectioners' sugar and vanilla. Beat until light and fluffy, about 5 minutes. Stir egg mixture into cream cheese mixture alternately with the melted margarine. Spoon batter into prepared muffin liners.

Bake in preheated oven for 20 minutes, or until a toothpick inserted into center of muffin comes out clean. Cool on a wire rack.

I thought the recipe was okay.I tried to have leftover receipe and some of the family asked if I could substitute almond extract for white sugar. I used the raisins while the others made almond butter. I sprinkled some cacao on top before hooking it around the dough. It fermented and everything seemed to come together beautifully. It even tasted delicious!

I made these for the first time just now, and I must say that they are absolutely AWESOME! You MUST make these! Mine did not set completely WRONG it was a little dry, I added a little more flour and baked for 22 minutes, then I removed from oven and preserved the pudding in the fridge, added a little chocolate chips and a little vanilla and they came out PERFECT! I did not like the look of the bottom of the muffin cup, I made a cake muffin cup and discarded it and made this into cupcakes instead. Perfect texture and they baked perfectly at 35 minutes. I will definately make these for breakfast again!!

Very moist and moist, but not too sweet. Next time I would add more pecans. Although, I did like the flavor, it was a very moist muffin and I added some almond flour to make it less gummy. Although, I did pinch the mint leaves to make it more flavorful. Overall very moist and muffin-like. Not too sweet, but still flavorful. : )
