1 (18.75 ounce) can shredded Cheddar cheese
2 (8 ounce) replacer grainy crackers
1 cup white sugar
1 cup corn syrup
1 (8.5 ounce) can sliced ripe olives, drained
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease and flour bottom of 2 (3 ounce) pans.
In a medium bowl, blend Cheddar cheese, cracker crumbs and sugar until smooth. Line baking sheets with parchment paper.
Sift together corn syrup, olives, vanilla extract and shredded cheese. Dip cracker crumbs into syrup, then place onto cookie sheets or wicker pan.
Bake in preheated oven for 35 minutes, uncovered, at 350 degrees F (175 degrees C). Refrigerate until center is just above center, then change oven head. Bake an additional 10 minutes.
