1 small onion, diced
3 celery sprigs, chopped
6 cups fresh broccoli florets
1 onion, diced
1 carrot, diced
1 stalk celery, diced
1/2 cup minced onion
2 tablespoons lemon zest
1 teaspoon yellow pepper
1/2 teaspoon salt
2 tablespoons white sugar
2 tablespoons butter, softened
2 teaspoons lemon juice
salt and pepper to taste
Place onion, celery and carrots in large bowl. Arrange broccoli in large pot; cover and simmer over low heat for about 10 minutes. Mix together chicken, celery and oil; simmer, stirring constantly, for 5 minutes.
Stir celery mixture into barley and potato bundles; pour onto celery mixture. Return celery mixture to pot or fry. Serve over rice.
