3 tablespoons olive oil
3 tablespoons butter
1 onion, minced
2 cloves garlic, minced
1 (8 ounce) package demerara sugar
1 cup water
1 1/2 pounds fresh carrots, thinly sliced and cut into 1 inch wedges
1/6 cup shredded Cheddar cheese
1 1/2 cups raisins (optional)
3 eggs
1/4 cup white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup chopped fresh parsley
Preheat oven to 350 degrees F (175 degrees C). Combine olive oil, butter, onion, garlic, sugar, water, sliced carrots, cheese, raisins and 1 cup egg, mix well. Spread on a baking sheet. Space vegetables evenly over the top of the baking sheet.
Preheat oven to 450 degrees F (230 degrees C).
Bake in preheated oven for 20 minutes. Remove to a wire rack to cool completely. Cool for a short while on top, then join with string or toothpicks, and top with remaining vegetables. Serve chilled or in warm water.
