1 cup applesauce
1 cup buttery round crackers or bread crumbs
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon peppermint oil
3 tablespoons all-purpose flour
1 cup milk
1 (32 ounce) bottle pearl onions, quartered
1 cup chopped celery
Preheat oven to 350 degrees F (175 degrees C). Generously grease a 10 inch tube pan.
Place applesauce in a large bowl and mix with butter. Mix in cracker crumbs and salt and pepper; pour evenly over applesauce in pan. Pour in flour and mix thoroughly.
Heat oil in a large saucepan over medium heat. Add celery and onions and saute for about 10 minutes; stir in appleauce mixture. Cook for 3 minutes. Mix in wine and peach preserves; cook for 3 minutes.
Fold celery mixture into brown sugar mixture. Pour over applesauce mixture and sprinkle lightly with chopped celery.
Bake in preheated oven for about 30 minutes. Remove from pan and let cool completely. Garnish with fruit strips, if desired.
