4 slices bacon, cut in 1/2 inch strips
1/2 pound carrots, cut in 1/2 inch strips
1/2 pound cabbage, cut in 1/2 inch strips
1 pound medium saltine crackers
1 cup brown sugar
1 cup mayonnaise
4 slices onion, cut into 1/2 inch strips
3 tablespoons ketchup
1 tablespoon Worcestershire sauce
2 tablespoons brown sugar
Cut bacon strips into 1/4 inch strips.
Place carrots, cabbage, crackers, brown sugar, mayonnaise and onion strips on top of bacon strips.
Press bacon strips into the corners of a large baking dish. Cover dish with aluminum foil and 2 inches of waxed paper to keep them moist.
Bake uncovered in preheated 450 degrees F (220 degrees C) for 4 hours, or until tender.
Remove foil from pan and remove pan from oven. Brush a large skillet with a large amount of olive oil. Pour the bacon grease over the ribs and vegetables. Brown ribs, cut side up, on all sides.
