6 medium potatoes
2 cloves garlic, minced
1 1/2 teaspoons dried oregano
2 teaspoons dried basil (optional)
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried basil
1/2 teaspoon salt
1 teaspoon paprika
1 teaspoon dried sage
1 teaspoon dried basil
1/4 teaspoon dried oregano
1 teaspoon dried marjoram
1 cup olive oil
1 onion, diced
1 tablespoon lemon juice
salt and pepper to taste
1/2 cup kalamata olives
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of water to a boil. Add potatoes and cook until tender and just cooked through, about 10 minutes. Drain, cool and cut into cubes.
To Make the Stuffed Potato: In a mixing bowl, combine garlic, oregano, basil, oregano, salt, paprika, sage, basil, marjoram, olive oil, onion, lemon juice and salt and pepper. Mix together and shape into a small casserole.
