1 1/2 cups margarine
1 cup white sugar
1 teaspoon vanilla extract
3 eggs, beaten
2 1/2 cups vegetable oil
1/2 teaspoon vanilla extract
10 cups chopped semisweet chocolate
Heat oven to 375 degrees F (190 degrees C). Lightly grease cookie sheets.
In a large bowl, cream together margarine and sugar until smooth. Beat in the eggs, one at a time. Mix in the oil, one at a time, mixing just until incorporated. Stir in the vanilla extract. Drop by rounded spoonfuls onto the cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until edges and tops are golden. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
