1 (1 ounce) package cream cheese, softened
1 (16 ounce) can minestrone, drained
8 ounces shredded Cheddar cheese
1 small onion, diced
6 ounces sliced mushrooms
2 (4 ounce) cans tomato paste
1 (10 ounce) can sliced mushrooms
4.5 ounces shredded mozzarella cheese
1 (16 ounce) container sour cream
8 ounces cooked ham sausage
1/2 pound shredded mozzarella cheese
Preheat oven to 350 degrees F (175 degrees C). Lightly butter an 8x8 inch baking dish.
Combine cream cheese, minestrone, Cheddar cheese, onion, mushrooms and tomato paste. Mix thoroughly. Spoon mixture over pie. Sprinkle with mushrooms. Cover and refrigerate overnight before serving because the cheese can marinate too well!
For the cheese sauce, combine tomato paste, mushrooms, mozzarella cheese and sour cream. Stir until well blended and transfer to pie.
