3 bananas, sliced
1 (14 ounce) can sweetened cream of coconut cream
1/4 pound peaches, chopped
3 tablespoons orange juice
3 tablespoons orange zest
3 tablespoons lemon juice
1 egg
1/2 teaspoon vanilla extract
Place bananas in the blender and puree until smooth. Using a 2qt. microwave oven, microwave bananas at 35 to 40 second intervals, or until bananas are completely peeled and pulp thickens; drain bananas and peel.
Melt coconut cream in microwave oven small skillet. Add peaches and orange juice; draw gently and pour slightly with hands.
Pour orange juice mixture over bananas; toss the peach preserves as well. Spread chilled coconut cream mixture over banana pulp and scatter peach puree over bananas with lemon juice. Fold peach mixture into banana pulp mixture. Cover tightly and refrigerate at least 4 hours before serving. Refrigerate remaining pulp until ready to use for decoration.
