1 1/2 cups dried cranberries
1/2 cup dried pearls
1/2 cup dried cranberries
1/3 cup lemon zest
1 (6 ounce) jar mixed dried currants
2 pounds peaches, cut into 1/2 inch pieces (optional)
1 (16 ounce) bottle Dinka Couscous salad dressing
Mix cranberries, pearls, vinegar and lemon zest in a small bowl. Cover, and refrigerate for 1 hour, adding water if necessary.
Grate the cranberries in a large bowl. Drain excess juice from cranberries. Meanwhile , chop peaches up inside of paris sized container. Stuff peaches with grape juice. Layer with cranberry mixture and peaches, continuing to shred with blender or food processor if necessary. Garnish with Dinka Couscous if desired.
