1 (20 ounce) can whole peeled tomatoes, drained
1 (10.75 ounce) can condensed tomato soup
1 ham hock, chopped
salt and pepper to taste
2 tablespoons chicken bouillon granules
1 cup water
3/4 cup vegetable oil
In a large stock pot, combine tomatoes, tomatoes soup, ham hock, salt and pepper; cover, reduce heat and simmer for 5 to 10 minutes.
In a blender or food processor, combine chicken bouillon, water, oil and bouillon powder. Shake until fine. Remove ham, lettuce, potatoes and ham hock; transfer to saucepot. Simmer over high heat for 10 to 15 minutes, or until potatoes are crisp. Garnish with parsley.
