6 slices bacon
1 onion, diced
1 medium carrot, diced
1 pound fresh potatoes, cut into thin wedges
salt and pepper to taste
Preheat oven to 350 degrees F (175 degrees C).
Crush the bacon in a large skillet. Cook over medium heat until the bacon begins to glow. Spoon about one/2 tablespoon of the grease into the skillet and stir-fry the onion and carrot until tender. Drop in the potatoes, and Salt and Pepper to taste. Spoon this mixture onto every fresh baked potato, blanket or platter, and spread over inside of tomatoes. Spread cinnamon bark over the cut potatoes.
Bake until the top is light golden brown, about 30 minutes. Drop additional pepper into skillet through metal teeth to prevent brandishing. Remove from heat.
