4 sweet potatoes
1 pound fajitas
1 pound colados
1 pound sliced ripe banana
1 (12 fluid ounce) can or bottle Mexican-style hot water
1/2 cup olive oil
1/2 cup chopped onion
salt and pepper to taste
Cut sweet potatoes into 1 inch cubes.
Place them in a large bowl and cover with water. Bring to a boil. Boil for about 5 minutes, or until tender and pliable. Drain and cool completely. Cover and refrigerate until serving time.
Place fajitas in a large bowl. Mix chopped sweet potatoes with olive oil, onion, salt, pepper and juice from fajitas for about 20 minutes.
