2 1/2 pounds lean ground beef
1/4 cup hot water
1 tablespoon curry powder
4 tablespoons all-purpose flour
1 teaspoon fresh lemon juice
1/2 teaspoon salt
1 teaspoon dried parsley
3/4 cup sliced almonds
Preheat oven to 350 degrees F (175 degrees C).
In a medium saucepan, combine water, curry powder, flour, lemon juice, salt and parsley. Bring to a boil and cook, stirring until thickened, 30 seconds.
Spread mixture evenly over the bottom of a 10x15 inch roasting pan. Place middle round of meatloaf over roasting pan. Spread remaining meatloaf over roasting pan.
Bake uncovered in preheated oven for 1 hour, basting occasionally with oven air. Cool halfway through baking. Allow to cool completely, refrigerate and freeze for future use. Serve chilled.
