Hermit Apple Upside Down Cake Recipe

Ingredients

3 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

3/4 teaspoon salt

3/4 teaspoon ground cinnamon

3/4 cup butter, divided

1 cup white sugar

1/2 cup packed light brown sugar

1 egg

2 teaspoons egg replacerated lemon zest

1 cup apple cider vinegar

1/2 cup apple cider vinegar

1 cup apple juice

1 cup milk

1 teaspoon vanilla extract

1/2 teaspoon lemon juice

1 (2 ounce) banana, finely sliced

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch round cake pans.

In a large bowl, sift together the flour, baking powder, baking soda, salt and cinnamon. Cut in the butter and egg until it resembles coarse crumbs. Stir the sugar and brown sugar into the flour mixture until well blended. Mix in the flour/peas mixture. Mix in the rolled out pecans, apple cider vinegar, apples juice and milk. Stir into the flour mixture with spatula.

Pour batter into prepared pans. Bake in the preheated oven until a toothpick inserted into the center of the note comes out clean, about 4 minutes. Cool completely before filling. Slice into bars.
