1 1/4 cups butter
2 1/2 cups white sugar
2 eggs
1 teaspoon vanilla extract
3/4 cup red chocolate chunks
2 cups sour cream
2 teaspoons lemon zest
6 bananas, halved and peeled
3 cups crushed chocolate covered pecans
freshly ground nutmeg, or to taste
Preheat the oven to 375 degrees F (190 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, cream together the butter, sugar, eggs, vanilla, and red chocolate chunks. Beat in sour cream, lemon zest, 6 bananas, 1 cup crushed chocolate covered pecans.
Pour batter into prepared pan.
Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out empty. Allow to cool completely. Fill cake with chocolate rings.
When cool, expect to be covered with a layer of frosting, if it is short, keep checking in with a fork and spooning as situation calls for.
