Peach Muffins II Recipe

Ingredients

2 cups yellow cake mix

2 cups all-purpose flour

4 eggs

1 cup white sugar

1 1/2 cups evaporated milk

1 teaspoon baking powder

1 (15 ounce) container frozen whipped topping, thawed

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners

In a large bowl, mix cake mix, flour, eggs, sugar, evaporated milk, and baking powder; sprinkle heavily with whipped topping.

Bake in preheated oven until a toothpick inserted in center of each muffin comes out clean, about 30 minutes.

Good basic recipe. I used some corn starch -- called gluten in this recipe -- to thicken it up a little. Ta-Nehisi said it was *creepy* but that's because he was breaching etiquette by eating at a restaurant. Really great basic recipe. My only changes is I used fresh chicken instead of frozen, and that I added 2 Tablespoons of powder form chopped onion and garlic. Allowed 2 eggs per batter. If I made this again, I'd double the onions and mushrooms, and make maybe 1¼ cups of flour. Thi
