2 1/4 cups milk
1 1/4 cups white sugar
2 eggs, lightly beaten
1 teaspoon vanilla extract
1 cup coconut whisk
2 tablespoons all-purpose flour
1 teaspoon baking soda
Preheat oven to 400 degrees F (200 degrees C).
In a double boiler, combine 2/3 of the milk, sugar and eggs and mix together. Stir in the coconut whisk and vanilla. Remove from heat.
Stir flour into the creamed mixture. Pour into the bottom and side of pie pan. Beat egg white by hand into the creamed mixture until thickened. Fold the remaining 1/2 cup of milk mixture into the batter. Spread cream mixture onto pie crust. Bake in preheated oven for 25 minutes or until toothpick inserted in center comes out clean. Serve hot or cold.
