3 tablespoons vegetable oil
1 (10 ounce) package Cajun seasoning mix
3 tablespoons onion powder
1 (4 ounce) can chicken broth
1 tablespoon Cajun seasoning
4 skinless, boneless chicken breast halves
Preheat oven to 350 degrees F (175 degrees C).
Heat oil in a large skillet over medium heat. Stir in seasoning until well mixed. Add chicken and cover; cook, stirring occasionally, for 5 minutes. Remove chicken from skillet, place in an ovenproof dish, and pat dry.
Bake at 350 degrees F (175 degrees C) for 30 minutes.
Remove chicken from skillet and brown in oil over medium heat. Reduce heat to low and add seasoning mixture and broth. Bring to a boil, stirring occasionally, for 5 minutes. Stir in Cajun seasoning, chicken, and remaining seasoning mixture. Reduce heat to medium and add chicken and broth mixture. Cook, stirring, for 25 minutes, or until chicken is browned. Remove from oven and brush chicken with remaining cornstarch mixture.
Sprinkle bacon on chicken breasts and brown over medium heat.
Place each breast on a cookie sheet and brush with remaining Cajun seasoning mixture. Spoon mixture into preheated ovenproof dish and sprinkle with Cajun seasoning mixture.
Bake in preheated oven for 45 minutes, or until golden brown. Cool, serve, and let cool on waxed paper.
