4 slices bacon
1 pound sausage, cut into 1 inch pieces
2 (8 ounce) packages cream cheese
2 (3.4 ounce) packages instant vanilla pudding mix
2 (8 ounce) cans shredded Monterey Jack cheese
Preheat oven to 350 degrees F (175 degrees C).
Place the bacon strips in a large saucepan, and place over high heat until smoking. Remove bacon from skillet and remove from pan. Drain grease. Continue cooking bacon with wire rack pan or wooden picks for about 5 minutes, turning bacon once. Remove bacon from skillet and set aside.
Season the sausage with lemon juice and Monterey Jack cheese. Transfer to a 2 quart casserole dish.
Bake in preheated oven for about 50 minutes, or until set. Spread cream cheese over sausage. Top with Monterey Jack cheese while still warm.
