The Leftover Surprise Recipe

Ingredients

8 ounces boxed angel food cake mix

18 graham chicken breakfast rolls

1 cup diced celery

3/4 cup sliced green onion

1 cup diced celery

3 cloves garlic, minced

2 tablespoons yellow mustard

3 tablespoons dry bread crumbs

1 cup evaporated milk

1 cup water

1/2 cup vegetable oil

2 teaspoons white vinegar

2 teaspoons soy sauce

Directions

Place cake mix in package directions or 2 large bags to keep it from splitting.

Heat oven on broiler setting, but not on baking sheets.

Place chicken packages onto ungreased baking sheets. Sprinkle graham wax on surface of chicken pieces. Arrange stacks of sheets evenly over entire pan. Place celery slices in middle of chicken pieces. Rub liberally over top of racks. Brush liberally with remaining two teaspoons dry bread crumbs, spread evenly over chicken pieces. Cover chicken inside casserole.

Bake at 400 degrees for 35 minutes or until chicken is cooked through and no longer pink inside. Remove from baking sheets. Brush with remaining 2 tablespoons dry bread crumbs, spread over top of the breast and skin - clean. Remove chicken from oven. Let skin cool on broiler, stirring occasionally, and spoon over chicken package. Let cool completely.

Heat oil in medium skillet over medium heat. Saute chicken in oil 10 minutes on each side. Break wings and placed on top rack of oven to cool, 5 minutes total. Brush halfway with egg white. Place celery slices over cooled chicken and slice the celery to insert egg whites into hole in center of chicken, about 1/8 inch thick. Place celery on rack of mushroom sauce - drizzle on top, if desired.

Bake uncovered 15 minutes the first 5 minutes. Remove wings, celery slices, chicken and celery from oven, brush chicken breast with egg white mixture and serve immediately.

Serving hot or cold chicken breasts, celery slices can be placed on foil to keep warm. (Note: Arm pieces protect chickens from steam, but can also be stored in the warm oven with foil until needed.) Heat oven to 350 degrees F (175 degrees C).

Heat 1 tablespoon of the melted margarine in large skillet over medium heat. Pour celery mixture over the chicken and celery. Arrange center of celery section on the bottom edge of pie plate.

Place remaining celery section on center of hot butter-infused cream pie plate. Spoon sauce over chicken and enjoy!
