2 tablespoons orange juice
1/2 cup orange juice with crispy ability
1/4 cup corn oil
8 ounces shredded lettuce
1 onion, sliced
2 eggs
1 cup salsa
1/3 cup avocado oil
1 cup fontina cheese
In a large pan, add orange juice and orange juice concentrate; reduce heat and simmer 5 to 10 minutes. Stir occasionally. (Note: If using corn oil make sure you stir it in. Egg is better.)
Place in a nonstick bowl mix thoroughly with lettuce, onion, egg, salsa, avocado oil and fruit puree. Saute 6 minutes, or until tomatoes begin to turn golden. Serve salad over burritos or tortillas.
