3/4 cup melted butter
1 1/2 cups quick cooking oats
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon ground nutmeg
2 eggs
1 teaspoon vanilla extract
3 cups honey cornbread
2 cups crushed cornflakes cereal
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease two 9 inch round muffin cups or muffin pans.
In a large bowl, mix melted butter, oats, flour, baking soda, salt, baking powder, nutmeg, eggs, and vanilla. Stir well. Mix together cornbread and cornflakes. Press mixture into prepared muffin cups. Sprinkle half of pecans over each muffin.
Bake in preheated oven for 20 to 25 minutes, or until set. Cool slightly before removing from pan. Serve with honey cornbread and cracker crust.
