1 cup margarine
2 1/2 cups white sugar
2 eggs
1 (11 ounce) package instant vanilla pudding mix
1 cup margarine, melted
1 teaspoon vanilla extract
1 teaspoon lemon extract
In a large bowl, cream together the margarine and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the pudding mix, margarine, lemon extract and lemon extract; blend well. Transfer the mixture to the greased 9-inch-square baking dish.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
