8 slices bacon
1 pound crawfish
8 slices processed cheese food
1 medium onion, sliced
1 green bell pepper, julienned
1 1/2 cups shredded Monterey Jack cheese
1 (1 ounce) can sliced ripe olives, drained
Place bacon along side of a large griddle to reduce grease. Fry fish on all sides for 3 minutes each side, or until open and no longer pink. Remove line from fish. Drain fish flaps and remove skins entirely.
Melt processed cheese food in a bowl in a large glass or metal skillet. Use a slotted spoon to remove flesh, leaving skin intact. Remove lid from plastic food tube and decorate with the sliced bacon, green bell pepper, green olives, and cheese.
