1 1/2 cups all-purpose flour
2 cups white sugar
3/4 cup shortening
1 cup packed light brown sugar
3 eggs, beaten
3 cups rolled oats
1 cup butter, softened
3 teaspoons vanilla extract
1 teaspoon salt
1 teaspoon baking powder
1 cup miniature marshmallows
In a medium bowl, beat the margarine, shortening, brown sugar, and 1 egg until very well blended. Beat in the flour and oats. Stir in the brown sugar mixture, then mix in the butter, vanilla, salt, baking powder, marshmallows and mini marshmallows. Gently fold dough into the mixture until well-combined. Shape into 1/4 inch balls. place in cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Cookies will be somewhat sticky. Remove from cookie sheets to wire racks. Cool completely, and frost with chocolate glaze, if desired.
