6 cups cauliflower, broken into small florets
1/3 cup shredded cabbage
3 tablespoons butter
1/4 teaspoon garlic powder
1/8 cup lemon juice
salt and pepper to taste
1/4 cup packed brown sugar
1 cup shredded mozzarella cheese
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of lightly salted water to a boil. Add cauliflower and cook until slightly translucent. Drain and set aside.
Stir butter into a large bowl. Mix in the garlic powder, lemon juice and salt and pepper. Stir in brown sugar, reserving 1 cup of the juice for garnish.
Place green onions and cucumbers in a medium saucepan, and let them cook with the water. Let them drain for about 30 minutes, then drain and place them in the water. Cover the entire pot and let stand for about 5 minutes.
Meanwhile, in a large bowl, whisk together the cauliflower, cabbage, butter, garlic powder, lemon juice, brown sugar, cheese and brown sugar mixture. Pour over cauliflower mixture and toss to coat.
Bake at 350 degrees F (175 degrees C) for about 1 hour. Remove from oven and serve warm.
