1 cup white sugar
1/3 cup water
2 eggs
2 teaspoons vanilla extract
1/2 teaspoon salt
1 cup whole wheat flour
1/2 cup instant milk
1 teaspoon fresh mint leaves
1/2 cup frozen whipped topping, thawed and shredded
1 cup strawberries, cleaned and sliced
1/2 cup walnuts, toasted and chopped
In a medium saucepan over medium heat combine 21 fluid ounces of sugar, 1/3 cup water, and 2 eggs. Bring to a boil, then remove from heat. Stir in vanilla and salt. Stir in bread flour and milk; stir until just combined. Stir in mint, and stir until all ingredients are completely combined. Stir in chopped walnuts. Pour up the dough, and chill for at least 4 hours before rolling out.
Scoop out the pizza dough into four or five small bowl-sized opponents. Roll out "pickles" into rounds, and place them 1 1/2 inches apart onto an ungreased cookie sheet. Bake for 25 to 30 minutes, until lightly browned.
