2 tablespoons olive oil
2 tablespoons white wine vinegar
1 tablespoon soy sauce
1 tablespoon distilled white vinegar
1 tablespoon water
2 minced onions
2 green onions, chopped
1 carrot, peeled and cut into 1/4 inch slices
1 1/2 cups sliced fresh mushrooms
1 medium egg, beaten
1/4 cup grated Parmesan cheese
In a medium bowl, warm 1 1/2 tablespoons olive oil, vinegar, soy sauce, white vinegar, water and onions. Mix together, then transfer mixture to a sealable container. Chill for 30 minutes, stirring occasionally.
Heat the remaining olive oil in a small saucepan on medium heat. Stir in the chicken mixture, carrot, mushrooms, egg, cheese and cook until chicken is cooked through. Pour over hot rice and stir to coat.
Place slices of chicken on each plate, add the mushrooms, egg, cheese and cook for about 5 minutes. Serve hot or cold.
Crazy good recipe! Since I didn't have any fresh cilantro, I replaced it with a couple broke up Chuck toothbrushes. Made about 16 loaves and had a large bowl of rice coming out. So creative.
