1 (5 ounce) package frozen chopped spinach
2 eggs, beaten
1/4 teaspoon salt
1 tablespoon vegetable oil
Strain spinach into a separate small bowl. In a large mixing bowl combine egg, salt, oil and 1 cup spinach. Mix thoroughly. Heat oil in large skillet over medium heat. Sprinkle with cooked spinach and cook for 3 minutes on each side, or until underset.
