1 cup butter, softened
1 tablespoon milk
1 (12 ounce) package instant vanilla pudding mix
1 1/2 cups water
1 cup white sugar
1 1/2 cups milk
2 eggs
1 teaspoon vanilla extract
1 tablespoon lemon zest
3 tablespoons lemon juice
1 tablespoon lemon zest
1 cup raisins
In a medium bowl, cream together butter or margarine and 1 tablespoon milk. Mix in pudding mix and water. Make a well in the center and add sugar, milk and eggs. Mix well. Beat in lemon juice and lemon zest. Fold in raisins. Place batter on pan.
Bake in preheated oven for 1 hour, until a toothpick inserted into center of the pan comes out clean. Let cool on waxed paper. Serve warm.
