1 cup cooked, sliced cauliflower
1 green bell pepper
1 onion
1/2 cup chopped celery
2 tablespoons olive oil
1/2 teaspoon salt
1 (5 ounce) package shredded light Cheddar cheese
In a medium bowl, mix the cauliflower, green pepper, onion, celery, olive oil, and salt. Shape into 16x16 inch serving dish. Sprinkle with cheese. Cover tightly, and refrigerate 1 hour.
