Lemon Chicken Salad Recipe

Ingredients

2 pounds skinless, boneless chicken breast halves

1 cup chopped celery

1 cup chopped onion

1 cup chopped celery

1 cup chopped fresh parsley

1 cup chopped fresh parsley

1/2 cup fresh lemon juice

1 cup chopped celery

1/2 cup chopped fresh mint

2 tablespoons chopped fresh parsley

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon dried oregano

1/4 teaspoon dried marjoram

1/4 teaspoon dried tarragon

1/4 teaspoon salt

1/4 teaspoon dried parsley

1/8 teaspoon dried basil

1 teaspoon dried sage

Directions

Preheat oven to 350 degrees F (175 degrees C). Reserve chicken breasts. Place celery, onion, celery, mushrooms, lemon juice, parsley and lemon zest in a large bowl until smooth. Stir in lemon juice, celery and parsley.

Arrange chicken breasts in a single layer in a large roasting pan. Rub with lemon juice mixture over the breasts; dust lightly with the remaining lemon mixture. Place roasting pan over medium heat, and place pan over medium heat for about 1 hour, or until chicken is no longer pink and juices run clear. Brush lightly with remaining lemon mixture, and place over medium heat for about 15 to 20 minutes, or until chicken is tender and juices run clear.

Bring a large pot of water to a boil. Add chicken, and cook for 1 minute. Remove from heat; uncover, and put on rack of broiler pan. Cover pan, and broil 10 minutes, or until chicken is no longer pink and juices run clear.

Meanwhile, in a medium bowl, mix together the celery, mushroom, lemon juice, parsley, lemon zest, celery and parsley. Pour mixture over chicken.

Place chicken over celery mixture, and sprinkle with basil and oregano. Sprinkle with marjoram.

Arrange chicken over celery mixture, and sprinkle with sage.

Broil chicken over medium heat 10 minutes. Remove from broiling pan. Discard celery mixture. Return space chicken to pan of oven. Season with salt and pepper flakes.

Broil chicken over medium heat 4 to 5 minutes, or until chicken is cooked through and juices run clear. Remove chicken and vegetables from oven and broil 2 minutes per side. Serve the chicken broiled over celery mixture on plates or over chicken and vegetables in individual bowls.
