Just made this soup for my wife and she said it was bomb! Looks great and is great flavor, but I would double the broth and leave out the ginger and garlic. I used Walnut Soul Kitchen blackened Tom Kha Soup and it was hit or miss. But once you get used to it, it is really easy to follow. I love the simplicity of it and I tried to replicate it as closely as possible. I found the recipe but chose not to use the fresh rosemary as I did not have it. I used fresh garlic and diced garlic. I used fresh fleshy mushrooms and cooked them briefly in the cavity of the chicken before putting them into the crock pot. They came out pretty darn good!
