1/2 cup butter, softened
1/2 cup packed light brown sugar
3 eggs
1 3/4 cups confectioners' sugar
1 teaspoon coconut extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
Preheat oven to 325 degrees F (165 degrees C). Grease and flour 2 (8 ounce) or larger round pans.
In a large bowl, cream together the butter, brown sugar, eggs and confectioners' sugar until light and fluffy. Beat in 3/4 cup of the flour. Stir in the coconut extract. Stir in the remaining flour and mix until well blended.
Pour batter into prepared pans. Bake in preheated oven for 40 minutes, or until a toothpick inserted into center of the cake comes out clean. (Horns sound!) Flip and bake for any additional 10 minutes.
