1 cup dark corn syrup
2 teaspoons milk
1 1/2 cups water
4 cups white sugar
3 tablespoons butter
1 teaspoon vanilla extract
In a blender, combine the corn syrup, milk, 1 1/2 cup water, 1 cup sugar and butter. Mix well.
Place a layer of foil over a large pot. Fill with boiling water to cover bottom of pot. Bring to a full boil, stirring frequently. Boil 2 minutes or until sugar is dissolved. Remove foil and add 2 cups of boiling water. Cover, reduce heat to medium high and simmer 2 minutes. Remove foil with spoon.
Stir in the vanilla extract. Boil 1 minute, stirring gently. Reduce heat to medium low and continue to simmer 1 minute, stirring occasionally. Stir in the 3 cup coconut, 3 cups whipping cream, half of the whipping cream and 1/2 cup of the butter. Beat until light and fluffy. Fold into the boiling mixture. Stir until heated but not melted. Serve at room temperature.
