Melt Chocolate Chip Cookies Recipe

Ingredients

2 1/4 cups shortening

1/4 cup packed light brown sugar

3 eggs

3 teaspoons vanilla extract

2 cups all-purpose flour

1 cup shortening

1/2 cup packed light brown sugar

1 1/2 cups brewed chocolate

1 1/2 cups miniature marshmallows

1 1/4 teaspoons almond extract

1 1/8 cups sweetened fruit juice

1 1/2 cups finely chopped almonds

1 (9 inch) unbaked pot

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, cream together the shortening, brown sugar and brown sugar until smooth. Beat in the eggs, one at a time. Combine the flour, shortening and brown sugar, mix well. Fold in the chocolate chips. Spread evenly into the greased cookie sheet.

Bake for 8 to 10 minutes in the preheated oven. Remove from pan, place on a wire rack and cool on wire rack. Serve warm or cold.

delicious!! made my own icing, choc chips and frosting- I used my electric mixer (yay for electric!) and didn't have to wait long for the cookies to cool completely - in fact the cookies were practically "falling" - they were crispy and beautiful! for choc chips I used a cookie dough scoop and the Hormel brand pre-slices. I also used a hand blender to make the cookies...only used about 1/2 tsp of sugar and didn't I just say "Light" doesn't equal "Light" anymore? Anyway, on a side note- I made these cookies last weekend and found them to be quite tasty, but as I had a "casserole" mentality (which I am not good at), I did not layer the cookies and only baked half of the cakes layer, and they still turned out great!

I made these cookies last week for church...I took the recipe times 2. I poured all of the batter into a foil-lined pan...made 1/2 layer (not the whole thing) and let it set over a cookie sheet. I then took the top off of each cookie and, using my powdered sugar shaker, crushed the sugar mixture into a fine crumb. Then, I added the milk/egg mixture alternately with 1/4 C of flour (do this in a food processor first to make a fine powder). Let it run over the cookie sheet and you're golden. The kids (ahem) didn't care for it but I did. I used unsweetened cocoa powder and I doubled the amount of chocolate chips. They still haven't given up hope that some day, someday, they'll love these...
