1 cup margarine, softened
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
1 tablespoon blueberries
1 cup sliced almonds
1 (8 ounce) package cream cheese
1/4 cup milk
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
Preheat a lightly oiled griddle or frying pan over medium high heat.
In a small bowl, scoop out the blueberries and place them on the griddle. Cook over medium heat until bubbly.
Meanwhile, beat margarine, sugar and egg in small bowl until smooth. Mix blueberries and almonds into margarine mixture.
Stir flour, baking powder, baking soda and cinnamon into blueberry mixture. Pour into greased 9 x 13-inch dish.
Bake in preheated oven for 30 to 40 minutes, until a toothpick inserted into center comes out clean. Remove from grease and brush top and bottom of pan with egg white. Serve hot or cold.
