1/2 cup butter, softened
1 cup packed brown sugar
1/2 cup packed light brown sugar
4 eggs, lightly beaten
1 1/4 cups white sugar
1 tablespoon vanilla extract
1 teaspoon almond extract
1 teaspoon vanilla extract
1 1/2 teaspoons lemon zest
2 tablespoons lemon juice
1/2 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Trace the pie crust onto a 9 inch cookie sheet.
Mix butter and brown sugar; sprinkle bottom and sides of crust with the brown sugar mixture.
In a large bowl, beat eggs, 1/2 cup white sugar, lemon zest, lemon juice and pecans. Pour mixture over crust.
Bake in preheated oven for 30 minutes, or until a toothpick inserted into center of crust comes out clean. Cool thoroughly before cutting into squares.
