1/4 cup butter or margarine
1 1/2 cups apricot preserves
1/4 cup sliced fresh strawberries
1 teaspoon white sugar
1/8 teaspoon vanilla extract
1 cup confectioners' sugar for sealing (optional)
1 (2 ounce) packet instant chocolate pudding mix
1 egg, lightly beaten
1 1/3 cups chopped walnuts
Preheat the oven to 375 degrees F (190 degrees C). Line a large 8x8 inch baking dish with aluminum foil, and grease one 8x8 inch pan.
In a large bowl, mix butter and apricot preserves. Top each sheet with strawberries, 1/4 cup sugar, 1/8 teaspoon vanilla, and 1 cup of confectioners' sugar. Press the mixture into the pan.
Bake for 35 to 40 minutes in the preheated oven, or until a toothpick inserted into the center of the roast comes out larger than expected. Allow to cool slightly.
Sift together the confectioners' sugar, pudding mix, egg, nuts, and vanilla. Spread over the cooled sheet.
