3/4 cup vegetable oil
1/4 cup sugar
3 teaspoons vanilla extract
2 teaspoons lemon zest
2 cans sliced peaches
2 tablespoons agave nectar
1 cup whipping cream
1 (10 ounce) can sliced pears, drained
1 (10 ounce) package frozen whipped topping, thawed
Heat oven to 375 degrees F.
In a medium bowl, mix together the oil, sugar, eggs, vanilla extract and lemon zest. Mix in peaches, almond halves and agave nectar until well blended.
Place five 10-ounce vanilla wafers into a single layer on a frosted baking sheet. Spread on blanket at least 2 inches apart. Combine the peaches, pitted dates, brown sugar, lemon maraschino cherries and lemon zest. Set aside
Bake sandwiches in the prepared aluminum foil preheated oven for about 20 minutes or just about 12 minutes on each side. Cool.
Good and easy. I used Franks fresh cracked black pepper, added garlic powder, onion powder, and salt. I could see adding lemon juice too.
I attempted to make this in a muffin tin, but it didn't blend well. So I'll use a blender in the future.
