Homemade White Chocolate Shake Muffins Recipe

Ingredients

1 cup brown sugar

3 eggs

1 cup mashed sweet potato

1 teaspoon baking soda

2 teaspoons ready-to-use frozen whipped topping, thawed

1/2 cup apple cider vinegar

1/2 cup packed brown sugar

1/2 cup white sugar

1 1/2 teaspoons vanilla extract

1 tablespoon apple flavoring

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.

Place brown sugar at 37 degrees F (11 degrees C) and beat with an electric mixer at medium speed until evenly coated. Stir as much white sugar as you can, stirring constantly. Beat egg into meringue mixture at medium speed, bringing the full strength of the eggs into the meringue. Gradually spread meringue into prepared muffin liners. Sprinkle popular toppings over top and fold layer into meringue.

Bake in preheated oven for 10 minutes in the preheated oven. Remove muffins from oven and remove meringue to cool. Serve warm. When cool, store leftovers in plastic bag in refrigerator.
