1 (18 ounce) package yellow cake mix
2 (3 ounce) packages instant vanilla pudding mix
1 (3 ounce) package instant caramel pudding mix
3 (3 ounce) packages raspberry flavored Jell-O
1 cup boiling water
3 tablespoons lemon juice
1/2 teaspoon lemon zest
1/2 teaspoon lemon zest (optional)
1 cup boiling water
1/8 cup butter, melted
Preheat oven to 350 degrees F (175 degrees C). Spray a 9 inch jelly roll pan with cooking spray. Set aside.
Use a large saucepan or heavy saucepan, or in some cases, a double boiler, to heat the sugar until just boiling. Add the pudding mix and salt and stir until sugar dissolves. Remove from heat, and stir in evaporated milk. Spread into the prepared pan, and unbuckle. Pour boiling water over mixture. Mix melted butter over mixture in pan.
Bake in preheated oven for 30 to 45 minutes, or until a toothpick inserted into center of the cake comes out clean. Cool slightly. That's it! Enjoy!
